Lemon Curd

3/4 cup sugar
1 tablespoon grated lemon rind
2 large eggs
2/3 cup fresh lemon juice (from 3 large lemons)
2 tablespoons butter

Mix sugar, grated lemon rind and eggs in a saucepan over medium heat with a whisk until sugar dissolves, about 3 minutes. Add lemon juice and butter, stirring constantly with a whisk for about 5 minutes. Remove from heat, cover and allow to cool. The mixture will thicken as it cools.
