Cake with raspberry and white chocolate mousse

Ingredients:
For the cake:
5 eggs
5 tablespoons of sugar
5 tablespoons of oil
5 heaping tablespoons of flour
1 sachet of baking powder
essences
butter (to grease the pan)

For the raspberry mousse:
400 g of raspberry
150 g of sugar
300 ml of whipped cream
1 sachet of gelatine

For the white chocolate mousse:
200 g of white chocolate
400 ml of whipped cream
1 sachet of gelatine

Cake with raspberry and white chocolate mousse

Preparation:

For the cake (24 cm diameter):
In a bowl, beat egg whites until they foam. Add sugar and continue beating until sugar dissolves.
In a separate bowl, egg yolks are mixed with essences and oil, and then poured into egg whites and sugar. Add the flour and baking powder.
Grease pan with butter, pour the batter and bake in preheated oven at 180 ° C for 20-25 minutes (until passes the toothpick test).
Allow to cool, and then cut in half and fill with the two creams.


For the raspberry mousse:
In a saucepan, put to a simmer raspberries and sugar until sugar dissolves. Cool slightly, then strain and throw the seeds.
When the syrup is cool, hydrate one sachet of gelatine and mix with raspberries.
Beat the cream and mix with raspberry syrup until smooth.


For the white chocolate mousse:
Place in a pot on low heat 200 ml of cream. When the cream is hot, add 200 g of white chocolate (in pieces or chips). Allow to cool, then add one sachet of hydrated gelatin.
Beat remaining cream and stir with chocolate mousse until smooth.
