Rita roulade

For the batter:
3 eggs
3 tablespoons sugar
3 tablespoons flour

For the filling:
jam (or cream of your choice)

In a bowl, beat egg whites until they foam, with whisk or mixer. Add sugar and continue beating. Add egg yolks and finally add the flour. Pour the batter into a baking tray greased with oil and bake at medium heat.

When baked, remove from oven and roll in plastic wrap. When cool, unwrap, spread with jam (or cream of your choice) and roll again (without plastic wrap). Then put in the fridge.

Can powdered with sugar before serving or can be decorated with cream or chocolate glaze.
