1 egg
1/2 cup of oil
1/2 cup of sugar
1/2 teaspoon baking soda
1 teaspoon lemon juice
250-300 g flour
zest of one lemon

Mix in a large bowl with a whisk the eggs, oil and sugar. Add baking soda, dissolved in lemon juice and the lemon zest. Gradually add sifted flour, kneading by hand until falls off your hand. If necessary, add a little flour. The dough should be hard enough that it can stretch the rolling pin.
Sprinkle work surface with flour and spread a layer of dough, a finger thick. Cut out biscuits with coockies shapes and place on a baking pan greased and dusted with flour or covered with baking paper.
Bake in preheated oven at 180 ° C until golden.
