Marmelade cake

2 eggs
1 glass of oil
1 glass of sugar
1/2 teaspoon of baking
1 teaspoon of lemon juice
500 g of flour
zest of one lemon
500 g of marmelade

Marmelade cake

In a large bowl, mix well with a whisk the eggs, oil and sugar. Add baking soda, dissolved in lemon juice and lemon zest. Gradually add sifted flour, kneading by hand until it detaches from the hand. If necessary, add a little flour. The dough should be hard enough that it can be grated.
Grease baking pan and coat with flour or cover with baking paper. The dough is divided into two, a larger piece and one slightly smaller. Grate the larger piece of dough into the baking pan, spreading evenly and pressing slightly. Cover the top with a layer of marmelade. Finally, grate over marmelade the other piece of dough, until marmelade is covered.
Bake in preheated oven at 180 ° C until golden.
