German Apple Cake

2 eggs
2 cups of flour
2 cups of white sugar
4 cups peeled and diced apples
1 cup vegetable oil
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda

Preheat oven to 180 ° C.
Peel and cut apples into small cubes.
Beat eggs with oil in a bowl with an electric mixer until creamy. Add sugar and vanilla and mix well.
Combine in a bowl the flour, salt, baking powder and cinnamon, then add slowly over eggs and stir until smooth. The dough will be very thick. Add apples and stir with a wooden spoon.
Grease pan and coat with flour, then pour the batter.
Bake at 180 ° C for 40-45 minutes (or until it passes the toothpick test). Then leave to cool on a wire rack.
The cake can be served glazed or dusted with powdered sugar.
