Fluffy crepes

(Recipe suggested by Simo)
500 g flour
4 eggs
300 ml milk
200 ml sour cream or yogurt
3 tablespoons sugar
2 sachets vanilla sugar
1 sachet baking powder
vanilla / rom essence

Fluffy crepes


In a tall bowl (for blender), put eggs, flour, sugar, cream (or yogurt), vanilla sugar and rum or vanilla essence. Mix with blender for 2 minutes until the composition is homogeneous. Then gradually add milk until desired consistency for crepes is reached. Finally add the baking powder and mix a little more.

Grease pan with oil and heat well. Pour the crepes mixture with a ladle, until cover the pan. Bake on both sides. Crepes will be very thick and fluffy.

Serve warm as desired: simple, with jam, sweet cheese or other fillings.
